The Weekly Lunch Review is a special feature where I will tell you what lunches I had for the week. I’m a firm believer in taking lunch to work in an effort to save money. So here goes:
Monday – Leftovers from Sunday’s lunch. This is a norm with almost all of my friends and it is very rare to find someone who cooks on Mondays. Sunday’s lunch is usually a big deal and can take some time to prepare. My mother prepared the main dishes of rice, baked chicken and vegetables.
Tuesday – More Sunday leftovers. This is a norm as long as I have meat and gravy to put on my rice.
Wednesday – I woke up early and prepared a meal of spaghetti with whole kernel corn and minced meat sauce topped with Parmesan cheese. This is a great lunch idea, that is very quick and easy. I used a whole package of spaghetti and a tin of corn and a small package of minced meat.
Thursday – Leftover spaghetti with Alfredo sauce and a piece of KFC chicken. When I cooked on Wednesday, the plan was to make enough so that I would have enough lunch for two days. However, it was not enough meat sauce because I gave my mother what was left. And even though I’m not a big fan of KFC, the chicken went perfectly with the pasta.
Friday – Breadfruit Cou-Cou and Steamed Bill Fish. My mother prepared this meal and it was yummy. I’m not a breadfruit lover, but breadfruit cou-cou is a lovely meal (as long as there is lots of gravy.) You can eat a little bit of this and still be full!
You may have noticed that in this weekly lunch review I did not mention any sodas or juices. This is because water is my beverage of choice at lunch time!
